The City Goat  

Our version of the traditional chèvre, the city goat is a wonderfully flaky, hand-ladled goat cheese that is as fresh as we can possibly make it.  Though the city goat is pretty perfect as is, you can easily add value by rolling it in chopped rosemary, tarragon, or peppercorns.  Really, the possibilities are endless.  Wendy, one of our cheesemakers, loves splitting it in half and spreading a dollop of Plum Preserves in the middle. She finishes it off with a  garnish of her homemade Spiced Walnuts.
